Can we keep VMware ESXi and just move off vCenter / VCF?

Yes — Nutanix runs ESXi nodes as a supported option. Most customers eventually move to AHV for licence savings but the platform supports a staged path that decouples the hypervisor decision from the platform decision.

How do we handle our existing Veeam estate?

What about disaster recovery?

Nutanix provides native DR via Async / NearSync / Metro replication between clusters. For multi-site DR we typically spec a secondary Nutanix cluster at colo (or NC2 on AWS / Azure) sized for the protected estate; replication policies map onto your existing RTO / RPO tiers.
